Taste of Home Cookbook Giveaway

I am excited to continue our Mother's Day week celebration with a cookbook giveaway. So many of our treasured family moments happen around the dinner table, so it's no wonder that family recipes become so beloved. Simply thinking about Grandmother's homemade biscuits, Dad's barbecue chicken or Aunt Sue's blackberry cobbler can make our mouths water and bring a tear to our eyes. Fabulous Taco Salad

Excerpted from Taste of Home: Cooking School Cookbook by Catherine Cassidy and Taste of Home Editors

4 Servings Prep/Total Time: 30 min.
1 pound extra-lean ground turkey
1 medium onion, finely chopped
1 teaspoon olive oil
3 garlic cloves, minced
4 plum tomatoes, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh cilantro
6 cups torn romaine
1/2 cup shredded reduced-fat Mexican cheese blend
1/2 cup salsa
In a large nonstick skillet over medium heat, cook turkey and onion in oil until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the tomatoes, salt and pepper; cook for 3-4 minutes or until tomatoes are tender. Remove from the heat; stir in cilantro. Divide romaine among four plates; top each with 3/4 cup turkey mixture, 2 tablespoons cheese and 2 tablespoons salsa. Yield: 4 servings.

Nutrition Facts: 1 serving equals 224 calories, 6 g fat (2 g saturated fat), 55 mg cholesterol, 467 mg sodium, 11 g carbohydrate, 3 g fiber, 35 g protein. Diabetic Exchanges: 4 lean meat, 2 vegetable, 1 fat.

A favorite family recipe is the lemon square recipe that is from a preschool cookbook that the mothers did back when I was in preschool. My siblings are always requesting that I make it.

My favorite family recipe is my grandma's 7-up pound cake. She would make it for us and send it down from Virginia to Florida every year when ever my dad came down to visit us. I've tried to make it 5 times in my life.
Twice it came out perfectly and 3 times in "came out" all over my oven. Thanks for the opportunity.

Pineapple pie is one of our family's favorite recipes. My mother-in-law made it quite often. With just a handful of ingredients, it is quick and easy to make and tastes good too.

A family favorite is my grandmothers cole slaw. No one can make it like her! Everything is finely shredded and it's sweet and so good. She always makes it with fresh cabbage from her garden.

My aunt Alberta always made Sunshine Salad for our family picnics, pineapple, shredded carrot,in sunshine colored jello. We children loved it, but more so the generous, delightful Aunt whose
radiant personality warmed us all.

My favorite recipe/food.....my mom's homemade chicken and noodles!! It's one of those "recipes" that you have to watch to find out how to make!! It's not written on paper. Just the other day, my young daughter commented that there's nothing better than Grandma's homemade noodles!!

I love my mother's pork chops. She uses just onions and braises them but they are oh so tasty. I actually have dreams about them sometimes when I'm really missing her. She's still with me but just lives quite far.
